- Ingredients
Marinated meat
- 1/2 pound bone-in goat meat
- 2 cloves garlic
- 1-inch ginger
- scotch bonnet/ petite bell pepper/ ata rodo AKA kpakoshito
- Optional 1/2 green bell pepper
- 1/2 onion
- 1/4 teaspoon cumin seeds
- 1/4 teaspoon anise seed
- Curry powder 1/2 teaspoon
- Salt as needed
- Hot water
Jollof
- 1 large onion
- 1 tablespoon turkey berries (optional).
- scotch bonnet pepper/ petite bell pepper/ ata rodo AKA kpakoshito
- 1 green bell pepper
- 3 chopped tomatoes
- 1/4 cup vegetable oil
- 3 tablespoons tomato paste/puree
- 1/4 teaspoon of nutmeg
- 2 cups medium-grain or long-grain rice
- Stock made from goat meat
- Salt is required
- 1 tablespoon ground shrimp substitute for shrimp stock/chicken stock cube
- Water is required
- Salt is required
Instructions
- Goat meat can be prepared
- Clean goat meat. Combine garlic, ginger and scotch bonnet (or petite bell pepper), green bell pepper, onions, and anise. Pour over goat meat. Salt and curry powder can be added. To tenderize the meat, add hot water as needed.
- Mix together the onions, turkey berries, and petite bell pepper in a separate bowl.
Stew
- Place oil in a large saucepan. Cover the pan with a tight-fitting lid. Once the oil is hot, add the meat and fry. You can reserve the stock for later. Set the meat aside from the saucepan. If the saucepan isn’t full, add oil to make it more oily.
- Stir-fry the tomato paste or puree for two minutes. Mix in the chopped onions, petite bell pepper or scotch bonnet, and turkey berries. Stir fry the chopped tomatoes. Cover the pan with the lid and add the nutmeg. Cook on high heat for five minutes, or until the mixture is cooked through.
- Rinse the rice until water runs clear. The stew can be made with the rice rinsed, the reserved goat meat stock from the meat, or ground shrimp, chicken stock, and water.
- Bring to a boil. Cover tightly. Once the water has boiled, open the lid and stir with a wooden ladle, or a long fork.
- Cover tightly and allow to simmer for 10-12 minutes on low heat. Once the time is up, take off the lid and stir. At this point, stir in the fried goat meat. Let it simmer covered for 10 minutes more. As you like, serve it with fried ripe plantains or coleslaw.
