Whenever you’re tired of eating plain rice or other rice dishes, coconut rice is an amazing go-to rice recipe for a change of experienced and the goodness of coconut milk in rice elevates the taste, and the creaminess and richness are tasty.
This dish is perfect and suitable for all party occasions, and also for lunch and dinner.
Ingredients needed to make Nigeria Coconut Rice are;
Cup rice (feel free to substitute brown rice if needed)
1 (15 ounces) can coconut milk
1 (29 ounces) can diced tomatoes
4 medium habanero peppers
1 small green pepper (diced)
1 small yellow onion (diced)
1⁄4 cup vegetable oil
1 teaspoon sea salt
1 teaspoon black pepper
Directions
Step 1. Boil the rice in water for about 10-15 minutes (enough where it’s not too soft — because we will be cooking it some more).
Step 2. Heat the vegetable oil in a cooking pot.
Step 3. Add the onions and stir with black pepper for one minute.
Step 4. Add diced tomatoes, habaneros, and coconut milk with the sea salt and cover to cook for about 7 minutes (or when the mixture comes to a boil).
Step 5. Add the rice and stir and cover for about 7 minutes (or when the rice is almost dry).
Step 6. Add the green peppers and let simmer until the rice has absorbed all the juices.
